9.Perfect Chicken Alfredo

This is a fun recipewhere quantities are never exact, but always make more because everyone ishungry when they see and smell this.

  • 4 chicken breasts or thighs if you prefer
  • 1 Small tin heavy cream
  • Small tin medium cream
  • med packet frozen veg
  • Grape or cherry tomatoes
  • 1 Packet of fettuccine or other pasta you prefer
  • Panko breadcrumbs


  • Maybe a richer sauce will please you better. In that case, substitute heavy cream or half-and-half for the milk—that's never a bad move.
  • Swap thighs for breasts if you prefer dark meat; how ever, it required longer cooking time so the thighs will take longer in thepan. The best way to cook them is with a quick trip to the oven. These chickenthighs, when baked in garlic butter are wonderful. Brilliant flavour!
  • Get experimental with the noodles if you like:fettuccini is a classic, but angel hair or spaghetti could work just as well.
  • Whatever pasta you choose should be completelysubmerged in your cooking liquid.
  • If you feel you need more veg, wait till thepasta is cooked then try stirring in a few handfsul spinach, and some halvedgrape or cherry tomatoes.
  •  If you want a crunch, you can easily toast up some panko bread crumbs in a skillet with butter.
  • This trick works for any pasta, and the added texture makes a difference on the top.
